Cieľom práce bolo zistiť ako vplýva teplota a substrát na produkty Maillardovej reakcie. Maillardová reakcia je chemická reakcia medzi aminozlúčeninami a sacharidom, ktorá sa vyskytuje pri spracovaní a skladovaní potravín Ide o veľmi zložitý proces, ktorého sprievodným javom je vznik hnedých pigmentov, preto sa nazýva aj neenzymatické hnednutie. Na túto reakciu vplýva mnoho faktorov, ktoré ju ovplyvňujú. Z týchto faktorov sme si vybrali teplotu a substrát. V experimentoch sme sledovali aký ma vplyv teplota na vznik produktov Maillardovej reakcie a ako sa dá znížiť množstvo vzniknutých produktov úpravou pH. Pri pozorovaní nami sledovaných teplôt sme zistili, že najviac produktov Maillardovej reakcie vzniká pri teplote 120 °C. Množstvo produktov Maillardovej reakcie sa dá znížiť úpravou pH, vytvorením kyslejšieho prostredia Autorský abstrakt: This bachelor thesis deals with the issue of Maillard reaction. The goal of the thesis was to examine the influence of the temperature and substrate on the products of the Maillard reaction. Maillard reaction is a chemical reaction between aminocompounds and sacharine, that occurs during the processing and conservation of groceries. It is a very complex process, which is accompanied by the creation of brown pigments, therefore it is called the non-ensimatic darkening. Many factors affect this reaction. From among these factors, we have chosen temperature and substract. During experiments, we were examining the influence of temperature on the creation of the products of Maillard reaction and the options of decreasing the number of products with lowering the pH. During by us observed of the temperature influence, we found out that most of the Maillard reaction products are created at the temperature of 120 °C. The number of the Maillard reaction products can be decreased by modifying of the pH by the means of creating a more acid environment.
