Spotrebiteľský pohľad na ich preferencie“ bolo naštudovanie a spracovanie aktuálnych a súčasných literárných poznatkov, kde v teoretickej časti práce opisujeme tvorbu jedlého gélu a procesy želírovania. V tejto práci sú zahrnuté charakteristické reologické vlastnosti s využitím mikroreologickej technológie, fyzikálne vlastnosti jedlých gélov s charakteristikou biopolymérov a biopolymérných mikrogélov. Ďalej popisujeme chemické vlastnosti jedlých gélov s charakteristikou polymérnej siete a a agregovanej disperzie. V práci spomíname vplyv jedlých gélov s obsiahnutými funkčnými látkami na zdravotný stav organizmu. Potom popisujeme spotrebiteľský pohľad na preferencie starších dospelých. V praktickej časti našej diplomovej práce sme zrealizovali dotazníkový prieskum. Zisťovali sme preferencie jedlých gélov vypracovaním dotazníkového prieskumu pre cieľovú skupinu starších dospelých. Naši respondenti boli zaradení do vekovej skupiny staršie osoby ako 55 rokov. Výsledky dotazníkového prieskumu sme spracovali a vyhodnotili sme ich štatisticky. Author’s abstract: The aim of the master thesis on Rheological, physical and chemical properties of edible gels. A consumer view of their preferences was to study and process the current and contemporary literature knowledge, where in the theoretical part of the thesis we describe the formation of edible gel and the processes of gelling. In this thesis characteristic rheological properties using micro rheological technology, physical properties of edible gels with characterization of biopolymers and biopolymer microgels are included. Furthermore, we describe the chemical properties of edible gels with the characterization of polymer network and aggregated dispersion. In this work we mention the influence of edible gels with contained functional substances on the health status of the organism. Then we describe the consumer perspective on the preferences of older adults.In the practical part of our thesis, we conducted a questionnaire survey. We investigated the preferences of edible gels by developing a questionnaire survey for a target group of older adults. Our respondents were classified into the age group of older adults over 55 years. We processed the results of the questionnaire survey and evaluated them statistically.
